This recipe has been in our family for as long as I can remember. It's light, fresh, and delicious. Basically summer on a plate. For some reason it reminds me of a doughnut? Here's what I learned:
- My family loves to top it with whipped cream. I personally don't think it needs it. You decide.
- The glaze is the best part.

1 package lemon cake mix
1 package instant lemon pudding
3/4 cup oil
3/4 cup water
4 large eggs
1 tablespoon oil
1/3 cup orange juice
2 cups powdered sugar
Preheat oven to 350 degrees. Grease a 9x13 cake pan. Beat together the cake mix, pudding mix, 3/4 cup oil, water, and eggs. Pour into pan and bake about 30-40 minutes or until cake pulls away from sides and is lightly browned.
While the cake is baking mix together the 1 tablespoon of oil, orange juice, and powdered sugar. Remove cake from the oven and poke holes all over using a fork. Pour the glaze mixture over the cake. After the glaze sits for a bit poke a few additional holes to allow it to sink in better. Let cool and then top each piece with whipped cream if desired.
