- I put the garlic bulb in a ramekin and roasted it for 45 minutes. It was perfect.
- Definitely spring for Jarlsberg cheese.
- Served it with pretzels and rippled potato chips. Next time I would choose a sturdy chip like kettle.
Cheesy Roasted Garlic Dip
1 head of garlic, roasted
1 teaspoon of olive oil
salt and pepper
1 cup freshly grated Jarlsberg cheese
1 shallot, finely diced
1/2 cup mayo
1/4 cup sour cream or Greek yogurt (I used sour cream)
4 ounces cream cheese, softened
1/4 cup green onions, chopped
chips and/or pretzels for dipping
Preheat oven to 400 degrees. Cut the top of the garlic off (exposing all of the bulbs) and put in into a small baking dish. Drizzle with olive oil and sprinkle with salt and pepper. Cover with foil and bake for 40-45 minutes or until the garlic is soft. Let it sit a bit to cool off. Remove the garlic from the head and mash with a fork. Set aside.
In a large bowl combine the mayo, sour cream, and cream cheese. Stir in the Jarlsberg cheese, shallot, mashed roasted garlic, and scallions. Season with salt and pepper to taste.
